Time: 60 minutes

Method: Pre heat the oven to 180C or gas mark 4 and grease a loaf tin with coconut oil.

Mix the coconut flour, bicarbonate of soda, baking powder, dried dates and cinnamon in a bowl and in another bowl beat the eggs. Add the almond milk, vanilla extract, honey and the coconut oil (after being melted and cooled) into the egg bowl and whisk. Add the dry ingredients to the wet ingredients, combine well then mix in the mashed bananas.

Pour the batter into the loaf tin. Bake for 45 minutes, then bake for an extra 15 minutes with tinfoil covering the loaf. You'll know when it's done if you pop a knife into the loaf and if the knife comes out clean. Whilst leaving the loaf to cool you can prepare the glaze.

Put the honey and the butter into a pan and bring to the boil, stir until the butter has melted and until thickened. Stir in the walnuts and leave to cool. It should thicken by the time the loaf has cooled then drizzle over the loaf and leave to set.
